DDELC, week 4

I had a party to celebrate my birthday this past weekend and have been spending the past week eating leftovers. So, the opportunity to eat something other than left over curried turnovers, black bean dip and spinach balls was starting to look pretty good. We bought a spiral cut ham and as luck would have it (since I wasn't on the shopping trip), it was a Smithfield Ham from Smithfield ham and bears the Virginia's Finest check. That is to say, it is local. So what to do with left over ham? Crepes, of course.

SO here is dinner ham and cheese crepes with roasted sweet potatoes and salad.

First, I made a batch of crepes with a mix of flour, milk and eggs (with a touch of olive oil).

100_1720_2 Then, I sauteed a bunch of onions and greens from my CSA (I think they were tatsoi, and bok choy but to be honest, I often don't recognize the greens, I just taste them and then decide to throw them into something or not) and covered this with Mornay sauce (cheese sauce).
100_1717 I added chopped Smithfield ham and wrapped this in crepes which I put in a backing dish, drizzled on a little more Mornay sauce and baked them for 20 minutes.

I served them with roasted sweet potato and onion based on this recipe from over at Kalyn's Kitchen. I left off the Parmesan and parsley. I made up a salad of greens, apples, feta cheese and (non-local) walnuts and dressed it with a mixture of honey, mustard, balsamic vinegar and olive oil.
