Easiest way in the world to deal with a whole chicken: crockpot. Cook the sucker on high for 2 to 4 hours (Sorry for the width of the window, it depends on the size of the chicken and if it starts out frozen. Stick a meat thermometer - cheap at Target - into the thickest part of the breast and get it to an internal temp of 165 or so). You don't even need to do anything else to it (though my best friend brined her last one, and said it was delicious.) Even plain, it'll come out moist and tasty, and it's dead easy to make.
