I had planned on picking up a few things at the market this weekend maybe finally attempting a whole chicken (as a vegetarian for close to 16 years, I have never cooked a whole chicken) and then the snow hit...so the weekend was spent snowed in and digging out.
After the afternoon of digging out my car, I thought a simple bowl of soup would certainly hit the spot and then I remembered this one I had seen at one of the Post blogs. It warms in more way then one.
Sweet Potato Bisque
(adapted slightly from Joel Harrington, who used to cook at one of my favorite Burlington, VT restaurants, in All We Can Eat)
makes 6 servings
- 2 tsp butter
- 1 1/4 cup thinly sliced onions
- 2 cloves garlic, minced
- 5 cups sweet potatoes, diced (I left the peel on)
- water
- 2 Tablespoons Sriracha sauce
- 3/4 cup half and half
- salt (to taste)
- Melt the butter in a large saucepan over medium-low heat. Add the onion and garlic; stir to combine, cook until the mixture begins to soften.
- Add the potatoes and enough water to cover. Increase the heat to medium-high; bring to a boil, then cook for about 30 minutes until they are tender. Remove from the heat. Keep a watch on the mixture and add more water as needed.
- Transfer the mixture to a blender or food processor, pureeing it to a soup consistency. Return the soup to the saucepan over low heat; add the cream and hot chili sauce, stirring to mix well.
- Add the salt to taste, stirring to combine; once the soup is heated through, divide among individual bowls and serve immediately, with a drizzle of the chili sauce and cream on each portion.
This was a wonderfully finning soup and would be nice with a green salad and a side of bread.
